Raw Honey: What’s All the Buzz About?
This isn’t a trendy health craze or a recent paleo diet fad created by organic food promoters to boost honey sales. Raw honey has existed as long as bees have!
Raw honey is what people used before we started over-processing our food to extend shelf life and increase profits. It’s honey in its most natural state—unprocessed, unpasteurized, and taken straight from the hive.
Bees produce raw honey right in the hive. It’s extracted directly from the honeycomb and poured into jars after a gentle filtering to remove any wax chunks.
When we refer to raw honey, we’re talking about something ancient and authentic—so original and pure that it almost got lost in time.
What Makes Raw Honey “Raw” and Natural?
The term “raw” can have different interpretations depending on who you ask. However, we define honey as “raw” if it meets the following criteria:
- Unpasteurized: It is not heated or processed in any way.
- Minimal Filtering: It may be lightly filtered to remove wax chunks but is not filtered to remove pollen.
- No Additives: It does not contain high fructose corn syrup or other artificial sweeteners.
- Pure and Unadulterated: It is not mixed with pasteurized or offshore honey and is not diluted with water.
- Single Source: It comes from a single hive or farm to maintain its unique varietal flavors.
Honey refers to the natural sweet substance created by honeybees from the nectar of plants or from secretions of living plant parts. The bees collect this nectar or secretion, transform it by mixing it with their own substances, then deposit, dehydrate, store, and allow it to ripen and mature in the honeycomb.
